Butter Pecan cookies
Not what I expected but pretty excellent. I did not make them pretty but if that's what you wanted... chop your fold-in pecans very finely, then make the dough into even balls, press down and put one pecan on top.
Ingredients
- 2 ½ cups all-purpose flour
- 1 tablespoon cornstarch
- 1 teaspoon baking soda
- ¾ cup salted butter melted
- 1 ½ cups light brown sugar packed
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon butter extract
- pinch or two of salt
- 1 cup chopped pecans
Instructions
- In a medium-sized bowl, stir together the flour, cornstarch, baking soda, and salt, set aside.
- In a large bowl, (stand mixer would work find) whisk together the butter and brown sugar until smooth.
- Add the egg, vanilla, and butter extract, whisk until combined and smooth.
- Add the flour mixture to the bowl and stir it in until combined with no dry patches.
- Fold in the pecans.
- Spoon onto cookie sheets in balls.
- 350 for 10-12
