meowmensteen's Oatmeal Crisps - not tried yet

 


1 cup butter (The original recipe uses shortening, but it's better with butter )
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp vanilla
1 1/2 cups of sifted AP flour
1 tsp salt
1 tsp baking soda
3 cups of oats

Cream the fat and the sugar, mix in the dries. You can either scoop and bake them right away or roll the dough into logs, chill them, and then slice them into thin cookies. Bake at 350F for ten minutes or so depending on how big you make them.

I usually just scoop them with my mini ice cream scoop. Makes the perfect sized cookie and its less fuss than making and slicing the logs.
