Makes 4 biscuits 3.25 inches squared - keep everything cold cold cold cold.
  • 2 cups/255 grams all-purpose flour - one large spoonful which is used for dusting.
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 6 tablespoons cold unsalted butter, cut into 1/2-inch cubes
  • ¾ cup cold buttermilk, plus more as needed
  • 1 large egg
Cut butter up and put back in fridge
Mix flour, baking powder and salt
Cut butter into dry ingredients - put back into fridge
Beat egg into buttermilk - put back into fridge

Wait about 10 mins

Mix buttermilk/egg into flour/butter until all the dry is gone

Put back into fridge - wait 10 mins

Dump out onto floured board and form into square. Flatten with rolling pin. Cut into 4 biscuits with cutter.

Put back into fridge - wait 10 mins
